One of the easiest ways I like to use corned beef is to make a simple "sandwich" using quality deli-style corned beef (like Boars Head). I get it sliced thinly and also pick up some thinly sliced Swiss cheese, and add some Bubbie's sauerkraut (which also adds a healthy dose of fermented food) to make a low carb version of a reuben sandwich. I like using my grain free quesadillas for these. In order to keep it super simple, you can make them as roll-ups without any bread. I like to use my grain free quesadillas to make "Reuben-dillas". I have never eaten corn beef but don't think I would like it. It has a funny looking texture to me. I do love kraut though.
Hi GGC - I am not a huge fan of corned beef but will eat it in small amounts now and then. I can't even remember when I ate it last! Lol Anyway ... I love your idea of the Reuben-dillas and I hope I can find Boars Head Corned Beef in the deli section at a grocery store in my area.

Well, I like to say I don't care for it, except for paper-thin slices on a (grain-free) Reuben (complete with Bubbie's, of course.) But my hubby likes to make a boiled dinner out of a big hunk of the stuff. I don't like the *smell* of it cooking, but I have to admit that it does *taste* pretty good!
I'm in your camp on this one - I can take it or leave it. My husband loves corned beef, so I'll use your crock pot recipe. Thanks for posting these recipes and Happy St. Patrick's Day to you and yours!
