Cranberry Chocolate Chip Mini-Muffins - Low Carb & Gluten Free
This evening I've been working on another recipe project so I thought I'd re-share one of my cranberry recipes since we are literally right on the cusp of cranberry season. I'm reposting my Cranberry Chocolate Chip Mini-Muffins so you can add it to your "to bake" lists. I have several different versions of cranberry muffins, but this one satisfies both your cranberry and chocolate cravings in one little muffin. The night I created these (almost 2 years ago), I was torn between making chocolate chip cookies and cranberry muffins...so I satisfied both of my cravings with one recipe. I hope you enjoy them. Yay! It's cranberry season again. Just bought a nice big bag at Costco last week. Looks like we'll have to start stockpiling pumpkin ... another shortage this year, I understand!

Yay! My Costco didn't have them yet (I looked on Saturday). I will DEFINITELY be looking for them this weekend. I hadn't heard about the pumpkin shortage...I remember that was a problem several years ago though. I will make sure to pick up a few extra cans so I'm not left scrambling at Thanksgiving time! :-)
These are great! I used blueberries instead of cranberries because that's what I had. Your recipes are all wonderful and I appreciate the details and photos. Way better than Wheatbelly recipes.
