Happy Independence Day!
Since the storms that were called for late this afternoon never showed up, we grilled some simple hamburgers and uncured hot dogs for dinner. I already had a batch of my Sesame Seed Sandwich Buns made as well as some of my Easy Coleslaw. I simply made a quick batch of fresh guacamole to top my burger with, sliced a tomato and dinner was done! Note to self and anyone else considering topping their burgers with guacamole; if your burger is not on a bun and you are eating it with a fork...by all means, top it with guacamole. Otherwise, don't be a goofball like me and forget that as soon as you squeeze your burger to take a bite, it's going to squeeze out like stepping on a tube of toothpaste! LOL It was a delicious, simple (and a bit messy) meal. For dessert we enjoyed my Easy Peach Crisp that I made earlier today topped with a bit of sugar free coconut milk vanilla ice cream. I snapped a couple photos below. Hope everyone had a great 4th. Now, Spike's least favorite part of today (tonight) is about to begin...FIREWORKS (and they are legal in Georgia this year for the first time...oh joy). Ugh, he just jumped up in my lap and his 4-hour tremble has begun! Enjoy!
