First Copper River Salmon of the Season!

This evening we had our first wild Copper River Salmon of the season. It was so good. I finally found some late Sunday when I popped into Sprouts to pick up a few things. They had it on sale for $17.99/lb. I had the butcher remove the bottom piece of skin since I was planning to cook it inside instead of on the grill. I kept it super simple and just seasoned with a bit of sea salt and black pepper. I heated some butter in a large nonstick skillet until it just began to sizzle slightly, then placed the fillets in and gave them a good squeeze of fresh lemon juice. I cooked them about 4 to 5 minutes on medium-high, then flipped them over and gave them another little squeeze of fresh lemon juice and covered them, reduced the heat to medium and cooked until just done, about 3 to 4 minutes. You don't want to overcook them. I served it alongside the leftover Cheddar Squash Casserole from Sunday night's dinner. It was a quick and absolutely delicious meal. I'm hoping Costco gets their Copper River Salmon in by this weekend. I'll let you know if I see it there this weekend. After dinner, hubby and I took a nice long walk and the sky here was absolutely beautiful as the sun was setting this evening. I wished I had my camera with me because the clouds and painted sky was a photographer's dream. I snapped a quick photo of our first salmon of the season below. Enjoy!

Hi GGC,

I was anticipating your Copper River salmon post and was not disappointed! :-) What a beautiful and special meal. Enjoy the rest of the "season" ... it doesn't last near long enough for me. We'll be on the lookout this week. So far no sign of them around here yet, but I have a feeling that it won't be long, now.

I'd have loved to have seen your sky pix! :-)

Thanks. I'm hoping the fact that we didn't get the Copper River here as early as we usually do doesn't mean that "our season" will be even shorter...hoping that it was just delayed for some reason and got a late start. Hope you find some this week! :-)
