Easy Coleslaw & "Mixed Grill"

It was an absolutely gorgeous day here today (for a change). It was bright and sunny and breezy. It was so beautiful out that hubby and I took a nice long walk before breakfast. I went and had my car washed and waxed, too, since there isn't any rain in the forecast for the upcoming week and I'm keeping my fingers crossed it will stay that way for at least a week. Hopefully the brunt of our pollen is behind us too.

For dinner this evening, I couldn't decide between grilled smoked beef sausages or grilled chipotle seasoned chicken thighs...so instead we enjoyed a mixed grill and had both! I made my Easy Coleslaw to go with it. It was a simple and delicious meal. There is just something special about the first few "grilled meals" of the season. They seem to taste unusually good for some reason. I snapped a quick photo of our easy "mixed grill" and included my coleslaw recipe below. This coleslaw dressing is so good and can easily be tweaked to suit your own taste. Enjoy!




Easy Coleslaw

Ingredients:

16-ounce bag of coleslaw mix (shredded green cabbage, red cabbage and grated carrots)
Heaping 1/2 cup of mayonnaise (olive oil based or home made), or to taste
1 rounded tablespoon confectioner's Swerve Sweetener, or preferred sweetener
3 tablespoons of "sugar free" bread and butter pickle juice (I used Mt. Olive brand), or to taste
2 to 3 teaspoons apple cider vinegar, or to taste
Few dashes of celery salt
Couple dashes of ground dry mustard

Directions:

In a large bowl, whisk mayonnaise, sweetener, pickle juice, vinegar, celery salt and dry mustard together. Taste dressing and make adjustments as desired, to taste. Add coleslaw mix and toss until evenly coated. Refrigerate for several hours until chilled. Toss before serving.

    By far you are my favorite recipe person eating low-carb and no wheat, etc with little to no sugar, and I can't thank you enough for your amazing recipes.

  3. I recently made your Easy Cole Slaw and my guests and I thoroughly enjoyed it. I have begun to track the nutrition information and need your help. Have you calculated the nutrition facts for this recipe? How many servings? I'm assuming, perhaps wrongly, that each serving is 1/2 cup. I would probably use one of the calculators available online if you don't have the information but would need to know the number of servings. Thank you for your help?

    Sorry for being late getting back to you...I'm usually MUCH quicker but we are in the process of moving and things are rather crazy around here right now. I have not done the nutrition information on the coleslaw but I typically use one of the free nutrition calculators online. If you need some recommendations on finding one, let me know. Things will settle down here soon and I'll respond much more quickly. :-)

  6. Thank you for replying to my comments. I'm able to calculate the nutrition information using one of the on-line calculators but it usually asks for the number of servings. Could you estimate how many servings you got and I could take it from there.

    I know how moving can be. The last move for us was 23 yrs. ago to another state. I'm trying to pare down just in case there's another move but at this stage in my life I wouldn't relish another move. The best of luck to you and your family in your new home and surroundings.

    I would estimate 4 to 5 (depending on serving size). Approx 1/2 cup is what I typically do. :-)
