This evening we had Chinese take-out for dinner. I had steamed Chicken, Beef & Shrimp w/ Mixed Veggies. I simply added my own organic gluten-free Tamari sauce and "Voila"...l got Friday night off from cooking.
While hubby went to pick up our dinner, I made a quick and easy Chocolate Coconut Pecan Bark for dessert by simply melting two 3-ounce chocolate bars (I used 88% cacao) and stirring in some toasted coconut chips and whole pecans. I didn't specifically measure the ingredients but guess that it was about 1 cup of pecan halves and probably 1/4 to 1/3 cup of coconut. After I mixed it together, I simply spread it out in a single layer on a parchment lined cookie sheet and popped it into the fridge for about 30 minutes to set and harden and then I broke it into chunks. Voila...you have "gourmet chocolate bark" that took only minutes to make. To store it, I used one of our leftover Chinese food containers. This is a super quick treat idea that you can made in just minutes and mix in whatever you have available...dried fruit, seeds, nuts, coconut, grain-free granola, etc. I snapped a few photos below. I often make a "down and dirty" single-serving version of this by melting a couple teaspoons of coconut oil in a custard cup, then stirring in enough cocoa powder to make it sort of syrupy, then adding some broken up nuts & coconut from the freezer. Then I spoon it up immediately. Not in any way elegant, but it gets the job done when you're in a hurry for just a little chocolatey morsel! :-)

ReplyDeleteYour little mixture sounds great (like Barbara commented). Sometimes quick and easy is the BEST way to go. Do you add any sweetener at all to your little concoction? It's a great way to get your coconut oil in, too, isn't it! :-)

ReplyDeleteI used to add a smidgeon of Swerve or a drop of stevia, but tried it without sweetener once and decided it was even better that way ... but your mileage may vary, as they say.

P.S. I do love your bark, GGC. I will definitely be making this! Simple to put together, beautiful result, it has all the Right Ingredients ... and there are left-overs to enjoy later! And it looks awesome in your wonderful Chinese porcelain serving dish! ;-)

My sons came for dinner this evening and the youngest son excitedly opened the container to try the bark and I warned him it wasn't sweet (I used 88% chocolate) and wanted him to be prepared. He didn't think it had any sweetness at all...LOL. In general, anything I make that doesn't have at least 70%, it isn't sweet enough for the "sugar babies". I will have to suck it up and give your no sugar chocolate concoction a try soon! ;-)

ReplyDeleteGenerally I don't post carb counts (occasionally I do). I usually pass along the free site I use for my calculations: http://www.caloriecount.com/cc/recipe_analysis.php
Some folks like myfitnesspal.com or sparkpeople.com Too many folks do not post accurately I've found and you can run the same items through a few different calculators and get slightly different numbers, so I generally don't use posted carb counts that other people do. Hope that helps! :-)
