I sliced a couple of carrots and half of a small onion and placed them in the bottom of my crock pot. I placed the roast on top of the carrots and onions, seasoned with salt and pepper, then topped the roast with about 1 cup of leftover pasta sauce (Del Grosso's Fireworks sauce) that I had leftover in the fridge. I added a bit of torn fresh flat leaf parsley and then covered it cooked on high for about 5 hours until I got home. It was cooked to perfection and the pasta sauce kept it very moist. I served the pot roast with the carrots and fresh brussels sprouts that I lightly steamed first, then browned in butter with some sliced hickory smoked mini beef sausages. It was a very simple meal to put together and perfect for this very cold winter night. I snapped a couple photos below. Enjoy!

I'm not usually organized enough in the a.m. to start dinner then. Nice to know that starting the roast at noon on "high" works so well!

I have problems knowing what cuts of meat to buy, especially when the recipe is worded one way and the meats at the grocery are labelled something else. Is there a website you could recommend, or other information source so that I can learn what and where to purchase? This recipe looks wonderful, but I am just not knowledgeable in purchasing meats. Thanks! Ken

I agree it can be difficult. Sometimes the exact same cut of meat is called different things depending on where you live. See if any of these "beef cut diagrams" might help you somewhat. Most of the time I use my crock pot on low so I was pleasantly surprised that high worked nicely without drying it out, too! :-)

We had this yummy pot roast today. It was really nice to come home after a busy day and just sit down to a lovely dinner! Our temps have been in the low "teens" all week, with even lower wind chills, so this comforting and warming dish was *especially* appreciated this evening! :-)

It's hard to beat a comforting pot roast isn't it! Even though I tend to use my slow cooker during the week, I find that sometimes weekends can be just as busy running errands and such that it's actually nice to use it on weekends, too! Speaking of which, I actually put on a crock pot of Spicy Cabbage Soup around midnight last night and it's been cooking all night long. It smells good here this morning! We have rain in our forecast here for most of the week. Yuck! :-)
