This evening I made pizza (again) for dinner. I enjoyed it so much last Friday night that I not only made another pizza...I doubled the crust recipe and made a BIG pizza...14-inches in diameter! I have a 14-inch pizza pan but usually only make a 10 to 12-inch pizza. I wanted to have plenty of leftover pizza for lunches this week. This makes a large family sized pizza when doubling the recipe. I used my no-flax version of pizza crust and topped it with browned spicy Italian chicken sausage, Fiorucci nitrite/nitrate free pepperoni, red bell peppers, onions and lightly sauteed fresh organic baby spinach. It was awesome and I have enough left for lunch the rest of the week. I snapped a few photos for you to see below. If you want to make a large pizza and don't have a big round pan, you can use a cookie sheet instead. Enjoy!
