ReplyDeleteThis one of my all-time favorites! As a matter of fact, I just happen to have some left-over deli chicken ... hmmm ...
Also, yesterday my hubby asked if I was going to make some more frozen yogurt ... he called it "ice cream" but I knew what he meant ... we'll go with that! :-)
Thank you sssssoooo much for posting your meals for the day, it really helps me figure out this new lifestyle. This recipe is on my weekend menu for sure!

ReplyDeleteThank you...so glad my meal posting is helpful. I think it makes it easy to "see" what low carb looks like, rather than just reading a list of "allowable foods". The allowable foods look so much better when put together into a meal don't they! ;-)
How many servings do you consider to be in this recipe? I could probably eat 2 or 3, but I'm thinking that 1 enchilada is the answer?

ReplyDeleteFor me, I eat 2 for my dinner serving and if I eat them for lunch, I usually only have 1. I usually make a veggie like steamed broccoli or something to go with them. :-)
