To go with our roasted salmon, I made mashed cauliflower -- but not just ANY old mashed cauliflower...I made PURPLE mashed cauliflower. LOL When I was grocery shopping this weekend, they had some of the most beautiful heads of purple cauliflower, so I picked one up. I will admit...it's odd looking but it's also gorgeous, too. I debated how to prepare it and decided to go with making my rich and thick Parmesan Cauliflower Mash. Even though it looked bizarre...it was delicious. My son said it looked like I threw "Barney" (a/k/a the purple dinosaur) into a blender. I made some simple steamed fresh broccoli to go with our meal. It was a colorful meal to say the least. I snapped a few photos for you to see below. Youngest son didn't leave until late this evening so this is a late post...but I wanted you to see my purple cauliflower. Roasted Salmon w/ Purple Cauliflower Mash
This evening I had planned to make salmon for dinner. I still had 2 large Copper River Wild Salmon fillets and was going to cook one of them. My youngest son popped in unexpectedly this evening shortly after I got home from work...so I ended up making both of them. I kept it simple and melted a couple tablespoons of Kerrygold Garlic & Herb Butter and mixed it with about 1 tablespoon of fresh lemon juice and a pinch of Celtic sea salt to coat them with. I placed the fish on a baking sheet and brushed the fillets with the lemon herb butter and popped them into a 450 degree F oven, then immediately reduced the temp to 425 degrees and roasted them for 12 minutes; removed them from the oven and covered tightly with foil and let sit for 10 minutes to complete cooking. They turned out great.

ReplyDeleteBelieve it or not, I actually found it locally at my Kroger! I had never seen them carry it before and it was just to beautiful to pass up. Pretty unusual looking, isn't it? :-)
