Personal Pizza - Grain-Free & Low Carb
It was bright, sunny and hot here today. I decided to make pizza for dinner with the leftover ball of pizza dough I had in the fridge from the Deep Dish Pizza I made about a week ago. The recipe makes more dough than fits in my 10-1/2 inch cast iron skillet so the bonus is that I have enough dough leftover to make a 10-inch personal size pizza with at a later time. Well, tonight was that time! This pizza dough is more "bread-like" than my regular pizza crust recipe. So, if you prefer that type crust, this would be a good one to try. After dinner, we went out and watered our pots of tomatoes, eggplants and herbs because they were beginning to wilt from the heat and even though rain was in the forecast...it was still bright and sunny. Not 5 minutes after we finished watering everything...the sky opened up and we had torrential storms that thankfully have stopped for now. Why does that always happen? Check out the photos I snapped of the pizza below. Enjoy!
