No-Flip Berry Pancake & Mini Salmon Patties - Saturday's Grain-free Breakfast
This morning we woke up early for some reason. It was bright, sunny and in the upper 60s. Since I was up early, I went ahead and made a nice breakfast. I thought about making eggs, but since I had fresh blueberries and raspberries in the fridge that needed to be used up, I decided to make my No-Flip Berry Pancake. It's one of those things that is so easy to whip up and then you just pop it into the oven to bake. No messy flipping pancakes and everyone's pancake comes out hot at the same time! While rattling around in the fridge, I noticed I still had 2 leftover roasted Copper River Wild Salmon fillets from a few days ago. I decided I'd incorporate them into breakfast to use them up -- there was no way I wanted to have to throw those out! I broke the salmon up with my fingers (to make sure there were no bones...and I actually found one). I kept these patties simple. I ended up with a little over 1 cup of broken up cooked salmon. I added one beaten egg, some seafood seasoning, about 1 tablespoon of minced green onions, a pinch of pink sea salt and mixed it together in a bowl. I added 1/4 cup of cashew meal as the binder since I had a partial bag of that left in the fridge too. I shaped it into 4 small patties and cooked them in a small skillet in a bit of coconut oil until lightly browned. I snapped a few photos below. ReplyDeleteLOL...Sure, there is always room for "one more" -- and I do think he appreciates it...but it's sort of "everyday" for him...so probably not as much as he should! ;-)

ReplyDeleteNow this is a fabulous breakfast! We finally got to Costco and picked up some beautiful Copper River Red. Cooked it tonight on the grill with nothing but butter and lemon ... WOW! :-)

ReplyDeleteYay! So glad you got some of the Copper River Salmon! I picked up to more packages yesterday -- I need to make one of them on the grill soon. Hope you are having a good weekend -- a couple of my tomatoes are actually turning red -- can you believe it? :-)
