I'm finally posting the recipe for my little dessert that I mentioned a couple days ago. I had hoped to post them last night but didn't get to it because of terrible storms that moved through. I made little no bake truffles or dessert bites that are so easy to make. The only equipment needed is a bowl and spoon to mix it together. No mixer required! You can make these as sweet or as chocolatey as you like. I used a deep intense cocoa powder made by
Valrhona. You can use your favorite brand. I made 2 separate batches. In the first batch I used 3 tablespoons of cocoa powder to make them super dark and intense and topped them with fresh raspberries. In the second batch I used less cocoa powder (2 tablespoons) and they came out a medium chocolate. Both were good. I shaped the first batch into little disks (after mixing in a bit of coconut) and topped them with fresh raspberries. With the second batch I made a few variations. I rolled some into little balls and then rolled them in granular
Swerve to "sugar coat" them. I also inserted a roasted almond in some of the little truffle balls before rolling in
Swerve. I rolled a few in unsweetened coconut, too. There are so many variations you can do. The truffles are made with pecan meal, cream cheese, confectioners
Swerve, and cocoa powder. Since I live in Georgia, pecan meal is pretty easy to find in my local grocery store. If you can't find it locally or order it online, you can grind your own pecans into meal. Since pecans are such soft nuts, the pecan meal works very nicely in these truffles. The addition of pecans will also ensure that you are "nuts about them" too! LOL They are decadent little fudgy confections that are so easy to make. No Bake Chocolate Pecan Truffles
Ingredients:
1-1/2 cups pecan meal
6 ounces brick style cream cheese, softened
6 tablespoons confectioners Swerve
2 to 3 tablespoons cocoa powder (I used Valrhona)
1 tablespoon unsweetened shredded coconut, optional
Optional add-ins or toppings: Fresh raspberries, nuts, granular Swerve or other sweetener, etc.
Directions:
Place pecan meal, cream cheese, Swerve and cocoa powder in a bowl. Using a wooden spoon or spatula, cream mixture together until evenly blended. Adjust sweetness to taste. Press mixture into a large patty shape; cover and chill for a couple of hours, or until firm. Roll into balls or shape into small disks. If desired, top with raspberries or roll in chopped nuts, coconut or granular sweetener. Store in refrigerator.

It looks like you really did your research on this one! But I'm afraid that I'll have to be conducting my *own* research ... lots of research! One thing I can say right off the bat, though, is that when it comes to chocolate, the more the merrier! :-)
Congratulations on making the "small screen"! Looking forward to watching your Food Fight episode ... I'll keep an eye out for it. I went to the PBS web site to see if by chance they'd posted it, but the program wasn't among the listing of shows that are available for on-line viewing.
Congratulations on the documentary. Maybe one day it will air in Australia too. These truffles sound delicious, I'll be giving them a try for sure!

Hope you enjoy your "research work"...LOL. It's so strange that other parts of the country have picked it up before Georgia PBS which is who filmed it! But they put it together and then offered it nationally to other PBS stations. Not all will pick it up and it will be aired whenever they choose to. It's quite surprising how long it took to air. I actually found out when people started contacting me telling me they had seen me on TV? Let me know if it gets aired your way. I will say when I saw the footage...I cringed. It's bad enough having a photo taken...but having multiple cameras on you from unflattering angles was almost more than I could bear to watch! Hahaha! Hope you enjoy the truffles! :-)
Can these be made with almond flour?

They probably would work with almond flour...although, this recipe might be one of those that work well with "almond meal", too since it's a little more coarse in texture. Pecans are a softer more moist nut than almonds which tend to be a little more dry. Let me know if it works if you try it. If it gets too dry, just add a bit more cream cheese. :-)
