Grilled Steak Fajita Salad -- Easy, Fresh & Delicious!
This evening I was in the mood for grilled steak and salad. I initially thought about having steak with a salad on the side. Instead, I decided to have steak ON a salad...basically a main dish salad. It was so easy to make. I seasoned a sirloin steak on both sides with Montreal Spicy Steak Seasoning, smoked paprika, roasted cumin and coarse Kosher salt and then rubbed it in. We grilled the steak for about 8 minutes on each side and then placed it on a platter and covered it with foil to rest a bit. Along with our steak, we grilled some Vidalia onions and red bell peppers. While the steak was cooking, I cut up some artisan romaine lettuce, diced some avocado, and diced some tomatoes. After the steak sat for about 10-15 minutes, I sliced it into thin strips and placed it on top of a bed of romaine and topped it with the grilled peppers and onions and the diced avocado and tomato. I drizzled the salad with fresh salsa on top as well as a dollop of sour cream...and Voila, dinner was ready! Hubby added some crumbled feta cheese to his. It was fresh and delicious and like eating a "steak fajita", on top of a salad. Real food, real simple...real good! I think that's called keeping it REAL! ;-) Enjoy!
