Grilled Marinated Chicken, Cheddar Cauliflower Mash Bake & Salad w/ Homemade Dressing

This evening we had Grilled Marinated Chicken for dinner. I made a simple little cheddar cauliflower mash bake using the leftover cauliflower mash from last night's dinner. I simply placed it in a shallow casserole dish and topped it with a mixture of shredded white and yellow sharp cheddar and then baked it until it was hot and bubbly. I topped it with some snipped chives when it came out of the oven. We had a side salad with the fresh Lemon-Herb Buttermilk Ranch Dressing that I made yesterday. It was such a simple, delicious and fresh meal to put together. 

The marinade for my chicken was simply the juice of 1-1/2 lemons (I used the other half lemon to make myself a big glass of lemonade to go with my dinner), about 1 teaspoon of finely grated lemon zest, a few tablespoons of olive oil, 1 clove of minced garlic and then added fresh chopped herbs from my patio garden...a couple teaspoons each of oregano, Italian flat leaf parsley and rosemary. I added almost a teaspoon of Celtic sea salt and lots of freshly ground black pepper. I marinated the chicken in a Ziploc bag in the fridge for about 4 hours. It only took about 6 minutes per side to grill since I pounded the chicken breasts fairly flat to make them cook more quickly. It was very flavorful and fresh tasting. We are enjoying using our new grill tremendously. We didn't realize how bad our old grill was until we used this one! I snapped a few photos of our dinner below. Enjoy!

  3. Tonight I took leftover cauliflower mash, topped it with cheddar cheese, and baked until bubbly. Oh! My husband begged me to make it again! He thought it tasted like mac and cheese--and he's a pasta lover. What a great, delicious idea.

    Isn't it great when you take a "leftover" and make it even better than the original version? And it's so easy too -- like getting 2 different side dishes from one meal! So happy you and your husband enjoyed it. :-)
