We finally got a chance to break in our new grill this evening too. We grilled filet mignon that we picked up at Costco. Wow...this grill gets so hot compared to our old grill. Hubby did a good job for his trial run. I had also bought some large sea scallops to grill on skewers, but didn't get around to making those. I sliced some fresh Campari tomatoes and mixed them with torn fresh basil, sea salt, black pepper and tossed them in some extra virgin olive oil and a splash of balsamic vinegar. For our veggie, I lightly steamed fresh baby Brussels sprouts and then sauteed a bit of onion until caramelized and tossed the sprouts in along with some oven roasted tomatoes packed in oil and sauteed everything together until caramelized. I topped it with Parmigiano Reggiano and placed a lid on to melt the cheese. I enjoyed one of my Perfect Dinner Rolls spread with Kerrygold's Garlic & Herb Butter with my meal. It was a simple, fresh and delicious meal. We enjoyed dinner outside on the patio tonight to savor every minute of this gorgeous weather. I even enjoyed "dessert" and coffee outside afterward as hubby sipped his wine. I could really get used to this kind of weather! It was a perfect ending to a perfect day. What a sight for sore eyes ... and the meal doesn't look too shabby either! :-) Actually, the meal looks *fabulous*! Good going with the new grill, you guys!
It's hard to imagine that there are places that have so many colorful blossoms already! In a "normal" year we never plant anything till Memorial Day (lots of people have tried and have sometimes not gotten away with it.) This year, however, we may delay planting till the 4th of July! Well, not really, but I doubt if there will be too many folks trying to get away with it early this year!

Here's to hoping you see lots of colorful blossoms very soon. When I lived back up north, I can remember get anxious and planting my garden before Mother's Day (which is a known no-no there)...and of course, we got a freeze that destroyed everything! It's bad enough to lose all the plants...but even worse to have to do all that work again (I used to have a big garden).
I don't blame you for waiting until it's safe. Sometimes though, a few warm days can "trick" you into thinking it's okay. Hope you are having a good weekend. :-)
Gosh your backyard is beautiful! It looks like your little dog (Spike?) really enjoys it as well.
I wish we had a grill. I've tried to get my hubby to get into grilling but so far no luck.
I'm hoping for filet mignon for Mother's Day and someone else will be cooking! LOL Well if not I'll cook again.
We'll definitely be having some sides "provided" by GG. :D
