To make our sandwiches, I sliced 3 boneless chicken breasts down the center to make them thinner and more uniform for grilling, keeping them attached (basically butterflying them). I spritzed them with olive oil and seasoned them with McCormick's Montreal Spicy Steak Seasoning and then grilled them for about 3-1/2 minutes per side over medium heat. While they were grilling, I split my sesame seed buns, rinsed and peeled off some fresh artisan romaine lettuce leaves, sliced a couple Campari tomatoes and then mixed a dollop of olive oil based mayo with some sriracha sauce to make a spicy spread for our sandwiches. I put our sandwiches together and was back in "real" grilled chicken sandwich heaven again! I didn't make any side dishes or anything else. For dessert I had a small slice of my Skillet Faux-nana Banana Walnut Bread along with a cup of Ciocattino Espresso that my youngest son gave me for Mother's Day to use in my Nespresso machine. I topped it with whipped cream and it was delicious -- better than anything you could find at Starbucks! Grilled Chicken Sandwiches on Low Carb Grain-free Sesame Seed Buns
This evening I put together a super quick dinner. I've done something to my right shoulder and am trying to give it a little rest and keep it as still as possible for a day or 2. I was in the mood for grilled chicken sandwiches -- they used to be one of my favorites, back when I ate "bread". Well, now that I have my Sesame Seed Bun recipe...I once again enjoy bread...low carb, wheat, grain and gluten-free bread. The best part about it is...it's not "consolation bread" which is what most other grain-free breads I've either made or bought have been to a certain extent. You know, "better than nothing bread"...but these buns stand on their own, so if you are really craving bread, buns, etc...just try these. I think you will be extremely pleased!

GGC, these buns are UH-MAZING! They are soft, moist, and they have a bit of a sweetness to them (though you can only tell that if you eat it plain). And best of all, my five year-old twin girls love them. I've used them as sandwiches, mini pizzas, and as cheese bread. Finally, a bread I can make for my girls (and me and the hubby too) and they're cute too! I cannot thank you enough. --Shauna

I know that the bread issue is one of the things that make it most difficult for some parents packing lunches for their kids and themselves, etc. This puts a lot of options back on the table for those of us that eat wheat/grain/gluten-free.

You have really outdone yourself this time! The buns are fabulous! I plan to make a double batch of them to take on vacation. Being able to pack sandwiches for a day of travel or sightseeing will be such a joy!

ReplyDeleteYay! So glad you like the buns! It really does open the door for easy meals and portable meals, doesn't it! When we take our vacation later this summer, I will do the exact same thing. My shoulder is a little better today (it's my rotator cuff) -- better enough that you know the first thing I made when when I got home from work...Sesame Seed Buns! LOL
Since you only have to stir it and scoop it...I stirred with my "good left arm" and scooped with the sore arm! We just had salads with grilled chicken for dinner but I was out of my buns and wanted to make another batch! They are so convenient which is one thing us "grain-free folks" need more of! Thanks for letting me know they turned out great for you, too! :-)
