Grilled Lamb Chops, Parmesan Cauliflower Mash & Buttered Haricots Verts
We had a fairly lazy Saturday and made our weekly Costco run late this afternoon. While at Costco we picked up a package of their Australian lamb chops. They have some of the most beautiful lamb chops I have ever seen anywhere. They are big, thick and meaty and not overly fatty as lamb can sometimes be. They look like miniature porterhouse steaks. When we got home, I decided to go ahead and make Marinated Grilled Lamb Chops for dinner. Since we got home late, we didn't have a lot of time to marinate them, I seasoned and rubbed them with the marinade ingredients and let them sit for about 30 minutes or so. They turned out great but its best if you can allow them to marinate for a few hours because the flavors penetrate the meat better. I served the lamb chops with my Rich and Thick Parmesan Cauliflower Mash and steamed, buttered fresh haricots verts (thin green beans) on the side. I used Kerrygold's Garlic & Herb Butter to season the haricots verts and added a tablespoon of the garlic and herb butter to the cauliflower mash to add flavor, too. It was a delicious meal and nice having a mild day here to grill out. I snapped a few photos of our dinner below. ReplyDeleteWe had lamb chops recently, too. We usually get ours at Costco, but we happened to be at Sam's Club and they had New Zealand lamb. We used to get NZ lamb quite often but it sort of disappeared from the stores. Anyway, it was just as delicious as Costco lamb!
Our Costco was out of KerryGold butter the last two times we were there. We're down to our last pound. We found a store that sells local grass-fed butter ... for $10 a pound ... I don't *think* so!
Hi CyberSis -- good to know about Sam's lamb chops being good, too. Does it run about the same price per pound as Costco? Costco here is $6.99/lb and they had a $2.00 coupon on it Saturday (off the package, not per pound). I will have to give Sam's a try since we belong to both. Wow...that's crazy ($10/lb) for butter. I have 3 3-package bricks of Kerrygold in the fridge (that's 9 bricks)...LOL -- plus 1 extra brick I'm working on and a tub of the spreadable. Our Costco still has it and probably will until St. Patrick's Day passes I'm guessing. :-)

ReplyDeleteThe lamb was slightly more at Sam's ... $7.99. We went there looking for Kerrygold butter and saw the lamb. Sam's didn't have the butter either, and I really don't remember them ever carrying it. They do have some KG products, like the enormous bricks of cheese, but I prefer the more "normal" size packages. Maybe our Costco will be stocking up on butter in honor of St. Pat's Day. :-)
Hi CyberSis -- the funny thing is that our Costco only carries the bricks of Kerrygold (3 to a box) and our Sam's only carried the tubs of the soft spreadable Kerrygold. But our Costco usually doesn't have it year round...so far they've carried it since late Fall -- I'm guessing it will disappear after St. Patrick's Day. Hope yours gets it soon! :-)

ReplyDeleteKerrygold butter is grass-fed and it doesn't use hormones, etc. I think many people believe it tastes more like "old fashioned" butter used to taste and that it has more flavor than other butters.
