Greek Style Spinach-Feta Pie -- Grain-Free Greek
This evening I made my Greek Style Spinach-Feta Pie. It truly is one of my personal favorites. It captures the flavors of one of my old favorite Greek dishes, Spanakopita (which is spinach and feta layered using thin sheets of phyllo dough pastry). Since phyllo is unfortunately made with wheat, this recipe allows me to get as close as possible to enjoying all the same flavors found in the original dish. The almond flour makes an absolutely delicious and easy to make crust. Even if you never thought you were a good pie crust maker, you will find this crust recipe foolproof and a cinch to make. I always add more spinach to mine and I like it best with fresh dill if I have it on hand. I also like to add lots of fresh lemon zest because I think it adds a wonderful fresh citrusy flavor that complements the saltiness of the feta cheese. I have also added cooked crumbled bacon to it in the past as well as made it both with and without crust. I substituted sliced green spring onions for the regular diced onions this evening because they needed to be used -- it turns out great no matter how you fix it. I love making this because it provides me several days of quick lunches from the leftovers. It reheats beautifully and some have told me that they also enjoy the leftovers cold, too. That is the cutest face!! How did he ever get attached to a flash light?
Hi Darelene -- We would frequently shine the flashlight beam of light on the floor and he would chase it around and around (much like they do with laser lights). Then one day he looked up and saw where the light was coming from and we let him "look at the flashlight"...it was "love at first light"! He is a real pest though when you actually need to USE the flashlight for anything. LOL :-)
