It was another cold, wet and nasty day here today. I had a package of ground sirloin in the fridge that I planned to use to make tonight's dinner. I wasn't in the mood for anything fancy...but as always, I was in the mood for something good. I just happened to have a plate of my
Easy Cheddar Black Pepper Biscuits on the counter that I made last night (using white cheddar). I love using these biscuits as little sandwich rolls so it was only natural that ground beef + biscuits = burgers...but not just any old burgers...we're talking Bubbies Biscuit Burgers! If you are finding yourself shaking your head with a puzzled expression wondering WHAT in the world that is...it's really pretty simple. It's my big "smack-down" to the Big Mac, which I was never really a fan of to begin with. You know, "2 all beef patties special sauce lettuce cheese pickles onions on a sesame seed bun)?
This evening I did a complete overhaul (sort of a smack at the mac) and made my healthy, low-carb, grain-free, gluten-free, garbage-free version that sound more like this..."1 real beef patty "no HFCS ketchup" mustard jalapeno cheddar cheese onions Bubbies on a grain-free cheddar cheese biscuit". So...which version sounds better to you? LOL. My burgers were simply ground sirloin mixed with diced onions, then cooked in a skillet on the stove until browned and done. I split and heated my "white cheddar black pepper" biscuits and lightly oven toasted them while the burgers were cooking. I placed a slice of "white cheddar jalapeno cheese" on the bottom half of the biscuit, topped it with my burger, added a squirt of "no HFCS ketchup", a squirt of yellow mustard and then topped it with a pile of Bubbies sauerkraut (who said you only put kraut on hot dogs)...and then added the top half of the biscuit right before enjoying my Bubbies Biscuit Burger (a/k/a a Big sMac). Check out my side dish consisting of one sauteed and sliced "monster mushroom"--there was just no adding it to the top of my burger like I had originally planned for fear of dislocating my jaw when trying to take a bite. I snapped a few photos for you to see below. I even got a little artsy-fartsy with the ketchup and mustard and drizzled it all over my plate just to give the ambiance of dining in a fine dining establishment -- no fast food joint for this chick. I was wondering what you used for ketchup, then I saw you list your choice and I'm not sure what it means. Probably a stupid question, but you could you explain what you use--either a brand or recipe you use? I've been using an organic one sweetened with agave but know there must be a better choice. Fortunately I don't use it often but still would like to do better.

Hi Joanne -- I use either Hunts w/ "no HFCS" or Heinz "Simply Heinz". I rarely use ketchup and when I do, not much. If I used it more frequently or loved it, I would make my own (I've tried it once using tomato paste and some other spices). It was "okay"...and I don't use it often enough to keep it in the fridge before having to toss it out. It isn't something I personally would invest my time in making...but if I used it more often I would definitely consider it! Hope that helps! :-)
