Easy Chicken Noodle Soup - Wheat & Grain-Free

This evening I was in the mood for soup for dinner. Soup always makes me feel warm and warm is what I needed to feel this evening. It was 6 degrees here this morning and didn't get out of the 20s for our "high". With the wind chill, it was brutally cold for those of us here in the south. I had to stop and fill my car with gas on my way home from work this evening and besides the painfully cold wind, my hands were so cold just holding onto the metal nozzle that I wanted to cry -- it was actually painful. When I got home and washed my hands, the cold water coming out of the faucet felt like hot water since my hands were so cold. That's why I decided that tonight would be soup night. I made chicken stock a couple of nights ago so all I needed to do was strain it and remove the chicken meat from the bones...but you could also use a good store bought stock instead of home made. I used my grain free tortillas to make "noodles" by cutting them into thin noodle-like strips. It's kind of like having home made Campbell's chicken noodle soup without the junky stuff. There is nothing fancy about this soup -- it's about as basic as you can get. The only veggies I added were one thinly sliced carrot and 2 thinly sliced green onions. I just happened to have a few leftover grain free tortillas in the fridge to make my noodles with (left from Sunday when I made White Chicken Enchilada Casserole). In less than 30 minutes I had home made chicken noodle soup on the table. I can't think of anything I would have rather had for dinner on this nippy night. I snapped a couple photos below as well as the easy peasy recipe. Enjoy!





Easy Chicken Noodle Soup

Ingredients:

6 to 8 cups chicken stock
1 large carrot, thinly sliced
2 green spring onions, thinly sliced
Sea salt and black or white pepper, to taste
2 cups cooked chicken
3 grain free tortillas, cut into 1/8-inch "noodle" strips

Directions:

In a 6-quart stock pot, bring chicken stock to a boil over medium-high heat. Add carrot and onions and simmer until tender, about 10 minutes. Season with salt and pepper, to taste. Add chicken and simmer uncovered about 10 minutes. Add noodles and heat about 5 minutes.

  2. LOL...I don't think so (about those gloves)...I would rather my gloves not have been alive at one time! :-)

    Perhaps you know a knitter who could make a nice pair of warm woolen mittens for you. The sheep don't mind sharing their excess fur with us! :-)

    The weather might be starting to break just a little. It was 10 *above* zero today and it almost felt like springtime ... *almost*!

  4. Hi CyberSis...LOL on 10 degrees above zero feeling like springtime -- our 40 this afternoon felt like summer (usually that is cold for me). So, what I have learned here is that temperature is all relative...40 is cold when that is your "normal cold temp". 40 is actually warm when just the day before I felt what 6 degrees feels like. :-)

    I got to thinking about your "cold experience" ... you know, frostbite is a consideration, especially after handling that freezing metal gas nozzle. If you notice anything unusual about your hands, be sure to get medical attention right away to avoid complications.

    Say, do you remember when gas stations used to be called "service" stations? Not only did they pump the gas for us, the gas was a *lot* cheaper then, too!

  7. Hi CyberSis -- Thank you! Hadn't even thought about frostbite -- my hands seem okay, thankfully! Yes I do remember when they were called service stations and they pumped your gas, washed your windshield and occasionally even checked the oil! And YES....they were a LOT cheaper! :-)
