Pizza Crust -- Wheat-free & Low Carb...& Delicious!
This evening I decided to make pizza for dinner...why on a Monday night you ask (since Friday's are my favorite pizza night)? This week we are having a "Holiday Pizza Party" at work for lunch. I am the one responsible for ordering the pizza for the gathering so I wanted to make a grain-free pizza crust for myself so I could join in and participate, too. So this evening I went ahead and made a double batch of pizza crust dough -- one for tonight's dinner (and a couple of lunches this week) and another one to enjoy with my coworkers at our Wednesday get together. I pre-baked the crust so all I need to do right before the rest of the pizza arrives is top it and pop it in the oven to heat for about 10-15 minutes. I will have a piping hot fresh pizza -- probably hotter than the ones we are ordering for everyone else! I didn't do anything fancy for tonight's pizza. I had ground sirloin in the fridge that needed to be cooked so I browned it along with diced onion and seasoned it generously with sea salt and black pepper and then added about 8 ounces of fresh baby spinach to the meat and onion mixture and cooked it until everything was done. I topped tonight's pizza with sauce, my beef/onion/spinach mixture and then topped it with fresh mozzarella cheese and Parmigiana Reggiano and red pepper flakes. It turned out good and was so filling I only ate one piece (1/4 of the pizza). If you haven't tried my pizza crust yet, it is one worth trying (and not just because it's mine) -- you can pick it up like a "regular pizza"...it tastes great and you won't miss eating regular pizza any more! It's quick and easy to mix together and the crust can be made and baked in advance, then wrapped and used fresh within a few days or frozen and used later. I snapped a quick photo below. Oh, my goodness, you have to hear this! I was making your crust again over the weekend. It's a staple at our house. I got distracted, and I also didn't have my glasses on. When I returned to measuring the flax seed meal, I put in 1 cup instead of 1/4 cup! When I realized it, it was too late. So I thought, what do I have to lose? I spread it and baked as usual. It still worked, even though it was firmer. And now the pizza is a delicious memory. I prefer the original, but we could even eat a mistake!

ReplyDeleteWere your coworkers curious about your pizza? Did some of them want just a little taste? If they did, I'll bet they were surprised at how yummy it was. It wouldn't surprise me if they asked for the recipe, too. :-)
LOL, Kathy -- I am laughing so hard! I am so glad you were still able to salvage the pizza crust and eat it! It is nice when you make a mistake and it still turns out okay, isn't it! Glad you didn't have to waste it and so glad you enjoy the "original crust", too! :-)

Hi Barbara! It was a pleasant surprise seeing a message from you today! I am fine -- just running in a million directions it seems. I have spent the last couple of evenings shopping after work until late at night and am exhausted when I get back home at 10pm. I have been just eating simple deli turkey and cheese wraps or leftover pizza and not really "cooking". I finally got my packages mailed yesterday and my Christmas cards written and in the mail today -- maybe after tonight, things will get back to "normal" (I hope). I hope you are doing well and have missed hearing from you. And no, no lottery winning for me -- although I did play! ;-)
ReplyDeleteHow nice that you were able to make your own pizza and join in with your co-workers! I know what it's like being the only one not eating the "usual" party foods. None of my co-workers are interested in changing their eating style, tho, beyond showing a little curiosity and then the comment about not being able to live without bread/pasta etc. Maybe someday I'll help convert someone, I hope!

Hi Darlene! Yes, it was a bit comical seeing my little pizza along with the humongous 28-inch pizzas on the table...but it worked! I did not feel any different or left out -- it was great! We have so many goodie baskets, platters and heaps of holiday treats in the office this last week or 2 and I can honestly say I don't crave it at all -- much of it sits in my office, too!!! If I want a "snack" I have roasted almonds or my 85% chocolate bar and I am not "settling"...but seriously happy with that! I hope to get back to posting this weekend -- have been trying to get caught up with holiday things the last few days. "Holiday Pizza" sounds great for Christmas eve dinner! I am planning to make lasagna (my usual) only this year EVERYONE in my family will be enjoying the grain free version! ;-)
