Happy New Year! This evening I made Beef Fajitas w/ Chipotle Lime Marinade and used the "Beef Loin Flap Meat Steak" I picked up at Costco this weekend. This is the first I had ever seen or heard of it. I decided to marinate it for fajitas based on the responses I received from others about how best to use it. I marinated it for 7 to 8 hours and it turned out absolutely delicious! It was tender, but with some chew to it (the good kind of chew). In the past I have used sirloin steak or skirt steak for my fajitas...but I have to say, this meat was very flavorful and I would definitely buy and use it again. Hubby grilled it until it had nice grill marks on the outside but was still slightly pink on the inside (medium). We covered it and let it sit for about 20 minutes and then thinly sliced it on the diagonal against the grain. I cooked green and red pepper strips and onions to have with our fajitas. We filled grain free tortillas with the beef, veggies, cheese and sour cream. These were some of the best we've had. I snapped a few quick photos below. The recipe is linked above in the first sentence. I went back through my blog to see what we had for New Year's Eve last year and realized that I made beef fajitas last year, too...how funny is that? ReplyDeleteHappy New Year! Well after being on my doctor prescribed elimination diet I fell off the wagon a few months back..........and then lost the wagon all together.
ReplyDeleteAfter feeling like crap for the past few months I have found the wagon again (not my new years resolution). Hopefully it doesn't take me too long to get back on and will be at it again. Looking forward to spending time on your blog again and getting my inspiration from you for all that you do for others. I will be spending this weekend cleaning and restocking fridge and pantry.

Hi!Just wanted to tell you thank you!! I'm on day 6 of eliminating all grains/sugar and last night I made this recipe. OMG..heaven....my super picky hubby and son asked for 2nds/3rds. After barely being able to boil water as of last week i was pretty proud of myself that this was my 15th meal in a row i had cooked and I even made your grain free tortilla. We had chicken instead of steak and I forgot that it was supposed to marinate in advance....sooo I just put some coconut oil in the wok...put the garlic and chicken in there and started browning that up and added the veggies and all of the seasonings (minus the olive oil) that you had said to use to make the marinade. It worked! Anyways...I'm so excited to continue this way of eating and try many more of your recipes :)
ReplyDeleteHi Katie! Congratulations on surviving the first 6 (and usually most difficult)days of grain and sugar elimination. You should be VERY proud of yourself -- for learning how to cook during these 6 days, too. I am proud of you, too. How very creative you were in switching it over to cooking in your wok, too. While I do like to cook and could easily make more complicated and fancy recipes, too...I like to keep cooking "real" and realistic for everyone (including myself)...otherwise you get burned out and slide back into the less healthy convenience foods again. It makes you feel good when you see your hubby and son getting seconds (and thirds) doesn't it? That says more than words could ever say! Congratulations -- I wish you many healthy meals and health improvements...you are off to a great start! :-)
