Happy Sunday! This morning we awoke to another bright, beautiful and sunny morning at the beach. Before heading out for the morning, I whipped up a delicious wheat free, grain free breakfast. I made little omelettes filled with sauteed onions, fresh baby spinach and torn bits of Applewood bacon left from yesterday's breakfast and topped it with sharp white cheddar cheese. I served them alongside my Easy Cheddar Black Pepper Biscuits that I made and brought with us from home. I also made a quick chocolate chip "mini-cake" using a little packet of muffin mix from the Wheat Free Market which is designed to be made in a mug...but of course, I always have to tinker just a little. I cooked mine in a small round casserole (bowl sized) and mixed it with an egg, a splash of heavy cream and a couple tablespoons of chopped walnuts...creating a chocolate chip walnut "mini-cake" that I cut into 4 small wedges and served with softened butter on top (it would also be good spread with some softened cream cheese, too). It only takes 1-1/2 minutes to cook in the microwave...and then you just flip it out onto a plate. I snapped a few photos for you to see below. Enjoy!

Hi GG, You would not be able to get me out of the water, since I was born 5 minutes from the Baltic Sea shore, yes indeed I am a water rat! Now water is the only place where I can exercise without too much pain! When I was in my Twenties I lived in New York City, my friends and I would drive to Jones Beach as often as we could, since the City was unbearably hot!

Hi Barbara! I love the water, too. I grew up spending most of my summers at the beach because my parents always had a place. Believe it or not, it has probably been 12+ years since I've been to the beach!!! It seems like I am always working or have some kind of project going. I have to force myself to slow down a bit. I am enjoying being at the shore...and YES, we brought Spike with us. I made sure we chose a house where I could bring him AND have a kitchen to cook in -- I'm trying to keep the meals simple, but delicious. We enjoyed eating out last night and I had char-grilled grouper and haricot verts -- it was delicious! We eat a good breakfast and then have a snack mid-afternoon and then a simple, fresh dinner. So you and I are both "water rats"...I used to be so very brave in the ocean and swim so far away from the shoreline -- fearless -- maybe too fearless. I am a little bit of a chicken now and keep looking for "JAWS"...lol. We did see a school of dolphins this morning -- it was beautiful. Thanks...so glad you enjoy my recipes! :-)
Hi GG, I lived in Algiers(la ville blanche) during the French occupation . We could not go to the beach unless we had a military escort. But the beaches were so beautiful and the water so warm. I swam so far out, that I could not see the beach anymore, I swam for hours, resting on my back when I got tired. What a fool I really was! Got into big trouble, because people thought I drowned-well such is Youth!
No *Body of Water* is safe from me, except the beaches in Guam, there one has an abundance of sharks!
The coldest water was in Maine, the temperature was so low it took my breath away, but once I got numb, I enjoyed the swim!
The days are getting cooler here and my husband wants your chicken pot pie, I had made it with a strong home made chicken broth pie and it was so good, that we both had too much of it. It was just fantastic !

Hi Barbara! You really are a world traveler (and swimmer)...aren't you! You have so many experiences -- how nice that must be. I've only been to Maine once (Bar Harbor), but it was too cool to swim when we were there. My younger brother and I were the daredevils that always swam way too far out in the ocean -- where 20+ story condos looked like "dots" along the shore...LOL. And of course, the year Jaws came out, we were at the beach when we watched it. I've never looked at the ocean the same way again since! It's amazing we all survived childhood isn't it? I can't wait for the days to get cooler -- I am looking forward to soup, chicken pot pie, chili, etc. We just dodged a thunderstorm here this afternoon -- but as soon as we brought towels back up from the beach, of course the sun came right back out! :-)
Hey Gourmet Girl! Wanted to let you know that I made the cheddar/pepper biscuits tonight but instead of making individual biscuits, I lined a rectangular pyrex casserole with parchment paper and cooked the dough as a loaf. Very, very good!! I didn't have any cayenne pepper but used a bit of Louisiana hot sauce to give it a kick. My hubby LOVED it that way.
Something we did the other day when I made the recipe as biscuits--made a tomato sandwich. Some mayo and a slice of home grown tomato. Yum Yum Yum!

Thanks, Anonymous! So glad you are enjoying the biscuit recipe -- and what a great idea baking it into a loaf, too! I bet you will find other ways to use it too! It's funny how finding a few simple recipes like biscuits or pizza, etc. sometimes are the simple little things that make being wheat free seem doable AND enjoyable!
