Breakfast Burrito at the Beach...

Happy Tuesday! This morning we got up early and took a long walk on the beach while it wasn't too hot yet and staked our umbrella and chairs. Even though I usually walk 4 to 5 miles most days at home...walking barefoot on the beach is definitely a lot more of a workout on your calves and legs...that's for sure! When we finished up our walk, I made another big breakfast to keep us fueled for the day (wheat free, of course). I made flax wraps (using Flaxseed Wrap Mix from the Wheat Free Market) to make breakfast burritos with. The wraps only take a couple of minutes to make in the microwave. I filled them with thin omelettes, Monterey pepper jack cheese, fresh baby spinach, thinly sliced tomatoes and a couple of pieces of leftover bacon from a couple days ago. I also mashed a couple of large ripe berries with a fork and stirred them into some Greek Gods yogurt so I could have a cup of "strawberry yogurt" to go with my breakfast burrito. It's another beautiful morning here -- I could get used to this! I snapped a couple photos of my breakfast burrito below. Enjoy!

If that is from the Wheat Free market, the recipe must be different from that which is in the book?? Is there coconut flour in this? Recipe?

Hi Anonymous! Yes, the wraps are from the Wheat-free Market. No, their wrap does not contain coconut flour (it contains ground golden flaxseed and psyllium powder along with spices). Usually I make my own recipes. The only thing I added to the little 1.8 oz packet was 1/4 cup water and 1 egg (it makes 2 wraps). I've recently tried a few of their products (they are Wheat Belly approved). Since we are on vacation, I brought a few items with me to use and it's been nice having the convenience. Of course, you know that I like to cook...but for others that aren't crazy about cooking or want the convenience of not having to make everything from scratch and who want something quick without having to measure things out...these are handy to have. Hi GG, did you add hot water to the mix to activate the psyllium powder and did you bake it or micro wave it? It looks so good!

Are so tiny starfish on the table real? Just beautiful

I am 15 minutes away from Half Moon Bay but the water is too cold for my mature body, some teenagers do go swimming.

Hi Barbara! The little packet just says to add water and an egg -- so I added tap water. I microwaved it for 2 minutes and then before filling it, placed it in a lightly buttered skillet to reheat it. The little starfish "were" real...but are dried now. I have a little bit of sunburn so I am trying to be careful. I bought some stronger sunscreen today to try and block the burned areas from getting any more sun! :-)
