Sunday's Greek Style Spinach-Feta Pie
This evening, youngest son came for dinner. I had thought about making salmon for dinner -- but as I told you a week or 2 ago...he said he wasn't crazy about the wild Copper River salmon...so I will save that to fix for tomorrow's dinner. Instead, I made my Greek Style Spinach-Feta Pie since I had a pound of fresh baby spinach that needed to be used. I also like the fact that I will have a few pieces left to enjoy for lunch this week!
