This evening I fixed the wild Copper River Sockeye Salmon that I picked up at Costco this past weekend. It was a large fillet that I cut into 4 nice sized pieces. I kept it simple by roasting it in the oven after brushing it with Lemon, Garlic & Herb Butter (2 tablespoons of melted Kerrygold Garlic & Herb Butter mixed with 1 teaspoon fresh lemon zest and 2 tablespoon of lemon juice). I put it in a 450 degree F oven to roast for 5 minutes and then turned the heat down to 425 degrees and roasted it an additional 7 minutes. As soon as I remove it from the oven, I cover it with foil and let it sit for at least 10 minutes or so.
Meanwhile, while my salmon was roasting, I prepared another baking pan to roast fresh asparagus as soon as the salmon came out of the oven. I placed the asparagus in a single layer on the pan and then drizzled it with avocado oil and seasoned with Celtic sea salt and freshly ground black pepper. Before tossing to coat the asparagus, I splashed it with a couple of generous splashes of pomegranate infused red wine vinegar to give it a little different flavor and then tossed it to coat evenly. As soon as I pulled the salmon out of the oven (which was now at 425 degrees), I popped the pan of asparagus into the oven and turned the heat down to 400 degrees and roasted it for about 15 minutes while the salmon was resting under the foil cover. I wish I could hire you to cook for me! All your recipes look delicious and you create them so effortlessly!! I just started the WB diet a week ago. Although I feel better, I feel overwhelmed with the creative cooking process. I have to cook 2 meals, one for me and one for my hubby!
Hi Debbie! Hang in there -- I do the same thing! My hubby does not follow WB, although he eats almost all of the dinners I fix -- I will sometimes add rice or a potato or pasta to his meal, depending on what it is -- but the majority of the time he eats what I eat and actually likes it! I just can't get him to give up his bagel breakfasts and sandwich lunches! Take it one day at a time and maybe sit down and plan 3 days of meals at a time and make sure you have cheese, nuts, etc. to use as snacks. If you are hungry...EAT!!! Just eat from the foods you are able to -- don't worry about the calories or portions for the first week or 2...just do what you need to do until you get over the hump and any withdrawal symptoms. In the beginning...try to make something you both can eat...like burgers, steak, chicken, vegetables. Add the bun to his or a potato to his...if you make spaghetti w/ meat sauce...find a jarred sauce you can use without added sugar. Make regular pasta noodles for him and zucchini type noodles for you. Try to make at least part of the meals the same and just add on for him...that is what I did. In 3 weeks, it will be 1 year of doing this for me! Make simple stuff until you get the hang of it. Make chicken salad, etc. and use a nice romaine lettuce leaf to hold it...things like that. Let me know if you need any suggestions -- I am more than happy to help you. I am living proof that you can do it..even without your hubby following it. I've lost 65 lbs doing exactly that.
