Today hubby was in a training class all day long, so I ran a bunch of errands while he was in class. My first stop was Costco (big shock, I know...right?)! Well, I just happened to hit the wild salmon jackpot again today...I was so excited. They had their fresh wild Copper River Sockeye Salmon fillets again...YESSSSS!!! I went back last week looking for them since they had them the previous week and they didn't have them...so this weekend, I'm not looking for them...and there they are! I bought 2 large fillets this time. Part of me thinks I should have bought more and frozen them...but I really like them fresh best. I'll have to think about it...there is always tomorrow for another visit if the mood strikes! ;-) I picked up a few other items while I was there, and then headed back home since I had the fresh fish in the car. I unloaded my Costco stuff and headed back out and did a little grocery shopping and made a few other stops. On one of my stops, I picked up a little loaf pan to make a little loaf of bread. I baked it late this afternoon when I got back, but haven't cut it yet -- I will wait and try it with breakfast tomorrow morning. I made an Almond-Flax loaf. I haven't tried making another loaf of bread since the difficult loaf I had made once before, shortly after going wheat/grain free. All I can report at this time is that this loaf of bread was MUCH easier to make and did not require a cement mixer. Now, as to whether it tastes any good or not, will be determined tomorrow! It is so funny -- when I made bread the first time, it was difficult to make but tasted okay and I was SO excited to be having bread. Now, almost a year later, I actually have a loaf of bread in the house that I can eat and it's like..."meh, I'll try it tomorrow". What a difference not being addicted to wheat makes!!! This evening, I'm sure you can already guess that I fixed salmon for dinner. It was so simple and easy to make. I simply melted 2 tablespoons of Kerrygold Garlic & Herb Butter; mixed it with the juice and zest of half of a lemon and brushed it on the salmon (on a foil lined cookie sheet) and popped it into a 400 degree F oven for 11-12 minutes. I served it with the leftover Parmesan Cauliflower Mash from a couple nights ago and a small salad. It was super simple...and super delicious. I snapped a few photos for you to see below. Enjoy!

I'm jealous, GGC! Fresh Copper River Red ... it doesn't get any better that that! And butter and lemon with it is nothing short of perfection! I'll have to see if our Costco has it this week.
ReplyDeleteHi again, CyberSis! It really is good. I have one leftover cooked piece from last night -- I am going to have it on a big bed of salad for my dinner tonight. I'm going to cook a piece of the 2nd fillet I bought for youngest son who is coming for dinner tonight -- and hubby hasn't decided what he wants at this point! Going to go pick up a few things at the store close by and figure it out. Hope you find some salmon at your Costco! :-)
ReplyDeleteSo I ran out today to get my salmon and I have to say this turned out beautifully. The fish is very flaky and the seasoning is perfect. I love wild salmon and now that is the only kind I eat. I am also making your pizza for the kids and hubby as they are addicted to it! I love it too but tonight I get to enjoy salmon all by myself! It's a good day!!
