Today we got up early and took a long walk before breakfast before it got too hot outside. After breakfast we went out and did our weekly Costco run. I found all kinds of good things there today! They still had wild Copper River Sockeye Salmon...so I picked up another fillet; they also had wild Pacific Halibut...so I picked up a piece of that, too (both of these are my favorite fish). I bought a couple pounds of wild caught shrimp, and a package of filet mignons to grill tomorrow. I also picked up a package of turkey burgers (I've bought them before and they are handy to have during grilling season). They contain only white meat turkey, sea salt, rosemary extract and black pepper...and you can throw them on the grill frozen, which is a plus when you don't have anything fresh or thawed to prepare. I also picked up my usual pound of fresh organic spinach as well as the little heads of artisan romaine that I have been enjoying in salads recently. There are some weeks I go there and not much grabs me...but today they had all kinds of things I liked.
For dinner tonight, I decided to make the halibut. I didn't do anything fancy; I simply pan seared it in Kerrygold Garlic & Herb Butter after seasoning it with sea salt and black pepper; after it was cooked on both sides, I moved it to a plate and covered it and then squeezed the juice of a lemon and about 1 teaspoon of lemon zest into the pan with the herbed butter and tossed in a few capers as well for a little more flavor. I julienned a large zucchini to make linguine and quickly sauteed it (for just a few minutes) in a little Kerrygold Garlic & Herb Butter, along with some olive oil and then stirred in a heaping tablespoon of the Mezzetta sun-dried tomato pesto I had left from last night's pizza; then added some shredded Parmigiano Reggiano cheese. It was a simple, quick and delicious side dish to go with our halibut. I served the halibut topped with the lemon, garlic and herb butter with capers. I snapped a couple photos for you to see below. I'll have to look for the wild caught shrimp at Costco, too. When I've looked for shrimp there, I've only seen farmed. A while back our local grocery store had wild-caught *Gulf* shrimp. It was the same price as the farmed. Who in the world wouldn't get the Gulf shrimp? Go figure!
Hi CyberSis! The wild caught shrimp I got at Costco were frozen with shell and tail on and raw. I have a inexpensive little plastic gadget that helps remove the shells easily...but you can do it with your fingers/hands, too. The brand at our Costco was "East Coast White Shrimp" and they were 21/25 size in a 2-lb bag. Wow...can't believe anyone would choose the farm raised over the wild caught -- at the same price!!! I enjoyed another piece of leftover chilled Copper River salmon for my lunch on a big salad this afternoon -- I was still full enough that I just had yogurt (mixed with peanut butter and chocolate) for my "dinner". We are going to go and try and sneak a walk in shortly this evening while it isn't raining for a change! :-)
