Today it got warm here -- in the mid-80s and since there is rain in the forecast, it's a bit humid as well. Last night I took the night off from cooking because I wasn't very hungry. I had eaten a larger than normal lunch of leftover Chicken Paprikash (which I finally finished up for today's lunch). Hubby stopped on his way home and picked up a rotisserie chicken for last night's dinner and I had a little of that with some yogurt...LOL. Since it wasn't very photographic (white chicken with white yogurt on a white plate)...I decided to spare you last night's wacky meal. Since it was so warm today and the clouds are moving in quickly, I decided to make a quick chicken salad so hubby and I can get our walk in, now that it's cooled off a bit with the sun setting. I diced chicken breast and finely sliced a green onion and stalk of celery and tossed it all with a mixture of olive oil based mayonnaise and sour cream I spooned it over a large romaine lettuce leaf, topped it with with some diced cherry tomatoes, a few roasted almonds and served it with half of a sliced avocado. It was fresh, simple...and most importantly COOL so it didn't heat up the kitchen or us before taking our walk in a few minutes. I snapped a couple photos for you to see below. Enjoy!

Hi GG, I want to tell you that I was browsing many grain free site, one was so bad and downright unappealing and ugly, some photos of food were unappetizing, so when I came to visit your page again it was like coming from Walmart( I refuse to shop there) to Neiman Marcus. Did your sons design your web page? It really is so inviting, uncluttered and wonderful for the eyes.

Hi Barbara...LOL about the unappetizing food photos on another site! Actually, I did my website, without any help! I intentionally wanted it to be uncluttered. I've never tried putting curry in my chicken salad -- I will have to try that. I love it in chicken divan. Hope you have a nice evening! :-)
ReplyDeleteGG, a propos *heating up your kitchen*- I have bought a fantastic table-top oven, the best on the market, called Breville Toaster oven. I bought the large size and I have not used my regular oven since. It is such a blessing and in your climate that would be one as well. I use it almost every day, it heats up in a jiffy. I bought it at a store that gives a life time warranty. It bakes so evenly, it is hard to believe! I could not be happier with this purchase. Just a thought. Take care Barbara

YesI love this toaster oven so much that I recommended it to my son & daughter-in-law (and anyone else that might be looking for a toaster oven!). Since it is just my husband & I at home now, this oven is perfect for us for pork chops, baked potatoes, toast or pretty much anything you would cook in a regular oven. Because it's just us we don't need to use the big oven therefore the house doesn't get heated up. Everything I have tried turns out as good if not better than when cooked in the big oven. And if something needs to be done quickly, the convection oven works like a charm! My son & daughter-in-law love theirs as well. I have had mine a little over 2 years now. I would not hesitate to buy Breville products for any other appliance we may need.

Hi Barbara -- never worry about annoying me -- I love to get tips from you and others. I know Breville is a good brand, but did not know about their toaster oven. It sounds like it also has convection (based on the review you copied). I'm embarrassed to say that my big oven has convection -- I just "had to have it" -- and I haven't used the convection option (in over 9 years)!!! You kind of have to learn the length of time to cook things again and I just never wanted to have to convert recipes, etc. -- but look at me now converting them anyway, to make them wheat free! I will read up more about the oven -- it sounds great! Thanks for the tip...and please, never worry that you are annoying me! :-)
ReplyDeleteOne does not need to use *convection*, I am like you and rarely use it.
ReplyDeleteThis oven saves energy and since I bake your beautiful recipes, it is heaven-sent. Now I use my regular oven as storage! LOL.. I also am running out of storage place. I am driving my husband crazy since he is a *minimizer* , so in the next days my super duper *spiral cutter* will be arriving and I have no room for it!
