This afternoon I decided to make a big beautiful salad for lunch using last night's leftover Chipotle Lime Grilled Chicken Breast. I sliced it and placed it on a bed of romaine lettuce and added sliced mini San Marzano tomatoes, half of a diced avocado...drizzled on a little ranch dressing...and BOOM, I had an awesome quick and easy salad for lunch! It was so nice outside that I decided to have lunch outside on the back patio before heading back to work. I snapped a couple photos below to show you how beautiful leftovers can really be! Enjoy!

Hi! Beautiful salad! What type of Ranch dressing do you use? I am on the HUNT for a wheat free/less processed version of good old Hidden Valley Ranch :)
Hi Carter! I use one called Simply Dressed...most of the time I make my own with oil, vinegar and herbs...or a mixture of salsa and sour cream and some avocado. I don't like much dressing (I never have) because it makes salad soggy -- I put just enough to add some flavor. :-)
