This evening I decided to make "Breakfast for Dinner". I made nitrite free Applewood smoked bacon that I baked until crisp, fried some cage free organic eggs and served it with the leftover
Ancho Chile Cheddar Biscuits from earlier in the week as well as some leftover
Squash Gruyere Bake from last night's dinner. It was quick, simple and delicious! It was extremely overcast all day today and began lightly raining as I snapped the pictures of our "breakfast/dinner". While the bacon was cooking, I snapped a few pictures of the roses that seem to have exploded in our backyard. For some reason, they almost appear fluorescent against the dark gray gloomy day. I posted a few photos below for you to see (recipes are embedded and linked above). Enjoy!

Sometimes I like breakfast for dinner even more than breakfast for breakfast!
What lovely, lovely roses! We're up to daffodils here. Tulip trees and weeping cherries are just beginning to bloom. Regular trees still have little teeny, tiny leaves. Won't be long, though. :-)

Me too,Cybersis -- many times I'm not hungry enough to enjoy "breakfast" in the morning -- but it tastes really good in the evening! Looks like spring has finally sprung for you! I am keeping my fingers crossed that the summer heat doesn't start too early this year so we can enjoy everything being so fresh and green for a bit! :-)
Food looks good...but I'm so jealous of the flowers, or should I say, the warm weather? I live in Central Iowa and we got a foot of snow yesterday!
Wow! A foot of snow in May? I had no idea that much snow was still falling anywhere. I guess I will stop my whining today about it being "chilly" at 62 degrees then! We are supposed to get monsoon rains here over the next couple days. I hope your snow melts quickly so your spring flowers can come out soon! :-)
Your breakfast is almost as gorgeous as your roses :). I've never baked bacon before, I need to try that. And that squash casserole looks wonderful, I need to try that too LOL.
