This evening I was in the mood for tacos. I had a beautiful head of fresh bibb lettuce in the fridge and a package of ground round beef. I made my own taco seasoning, shredded some sharp cheddar cheese and diced a beautiful red ripe tomato I had sitting on the counter...and "Boom"...dinner was ready in no time! It was a delicious, fresh and beautiful meal that was so simple to put together. Today was a gorgeous day here -- upper 70s/80 and sunny...except for the sky-high pollen counts (about 2,100)..."I say as I type and sneeze my head off"...it was a picture perfect day. Spring has definitely sprung! My once black car is now heavily coated with yellow-green pollen -- I am actually looking forward to the rain later this week to wash some of it out of the air. Thanks, Cybersis! Well, I just checked our pollen count for this morning to see if last night's torrential rain lowered it any...it is "down" to 7,809 this morning...yuck! I was hoping to take a walk this morning, but think I will pass! :-)
