This evening I was in the mood for my
Greek Style Spinach-Feta Pie. I also just happened to have 1 pound of fresh organic baby spinach that I needed to use...so, naturally this dinner choice was the perfect solution to use it! Even though I typically use only 10 ounces of fresh cooked spinach in this recipe...in tonight's spinach pie, I used the entire 16 ounce container...a full pound of spinach. I absolutely love spinach...so it worked out great. I snapped a few photos below for you to see. The recipe is embedded in the link above. Enjoy!

Made this tonight with my *sous chef* husband who only knows how to make cottage cheese pancakes. He made the crust and the result was looking very professional. The dish turned out beautifully and we were amazed how the pie crust did not even crumble one bit. It was delicious. Next time I want to use Monterey jack or Swiss cheese.

Thanks, Barbara! I am so happy that it turned out well for you and that you both enjoyed it. I bet it would be delicious with either of those 2 cheeses you want to try -- you could even add some crumbled bacon to it, especially with the Swiss cheese. It is amazing how well the crust does, isn't it? It turns out better than many other "traditional wheat based" crusts that I've made in the past. I just had a leftover piece for my breakfast again today -- had a piece for yesterday's breakfast as well -- I thoroughly enjoy it as breakfast/brunch too! Hang in there -- everyone loses weight at their own pace -- trust me, I was absolutely shocked that mine happened as quickly as it did -- that has never ever been the case for me in the past. I made your greek spinach feta pie on Tuesday, 5/7. I am a very inexperienced cook, so this was a challenge for me. What with the chopping and cooking of the onions, the making of the crust, the cooking of the spinach, zesting the lemon mixing the ingredients and putting it all together, it was the most complicated thing I've prepared so far. Trying to improve the way I eat and that definitely calls for cooking! This is the first of your recipes I have tried. I'm trying to eat wheat free, grain free, sugar free, low carb. I love looking at your blog and lots of others. If it wasn't for you all, I'd still be in the dark about what to cook, how to eat, what is available out there etc. You're a gem. :-) Thanks for your work and time and creativity. You're amazing.
Oh I forgot to mention that I loved it!! It was fabulous and I was so darn proud of myself for making this beautiful creation that I was actually able to eat and enjoy. Woo Hoo. Actually gave two pieces to my Mom and she said it couldn't have been any better and she really liked it too. I too had it for breakfast on a couple of mornings with a piping hot cup of coffee. Yum.
