Chicken Mozzarella-Parmesan Casserole
This evening I wanted to make a quick and easy dinner and decided to make a simple Chicken Mozzarella-Parmesan Casserole. I quickly sauteed about 1 pound of boneless chicken breast cutlets (seasoned with sea salt and black pepper) in a little olive oil just until they turned white. Then I layered the casserole dish and made 2 layers using my favorite DelGrosso pasta sauce, then the chicken cutlets, fresh mozzarella cheese, Parmigiano Reggiano, and repeated the layers again. I ended with a layer of sauce on top and then added about 1/4 cup of Ricotta cheese dropped in little dabs on top and some shredded Parmigiano Reggiano. I baked the casserole in a 350 degree F oven for about 20 minutes, covered. I then uncovered the casserole and baked it for an additional 20 minutes, then ran it under the broiler for about 3 or 4 minutes to brown and bubble the cheese a bit before removing it from the oven. I sprinkled the Chicken Mozzarella-Parmesan Casserole with some freshly chopped Italian parsley and served it over lightly sauteed zucchini noodles. It was delicious! Next time I will use a larger more shallow baking dish and make only one layer of chicken cutlets instead of 2 to make it easier to serve. It was really delicious with all the fresh mozzarella cheese (1 pound) as well as the spicy sauce. I snapped a photo below for you to see. Enjoy!

Do you have any wheat/grain free appetizer recipes to share? I can't think of anything to bring and totally committed to eating this way. Thank you!
ReplyDeleteHi Kimberly -- you could always make little meatballs or little skewers with cubed cheese, veggies, meats...you could bring a homemade ranch dip (with fresh herbs) and veggies to dip...someone has posted a sausage ball recipe on the WB page before -- just like regular sausage balls only they substituted almond flour for the normal biscuit mix you mix the sausage with...are you thinking a hot appetizer or cold or what kind of thing do you like?
ReplyDeleteThanks so much for the ideas! I think I'm going to do the sausage balls and veggies/dip. I'm curious too, did you start losing right away? I've been on this for 11 days and lost 1.5 and then gained it back. Scale hasn't moved. I'm sticking with it but frustrated. Anyone else reading this have that experience? I do drink wine and wonder if it's the sugar in the wine that is the problem. A bigger problem will be giving it up :)
ReplyDeleteHi Kimberly -- it takes some people longer to lose. Have you quit grains and sugar in addition to wheat? That helps a lot. I don't know why my weight dropped so quickly because it never had before on other diets I tried -- even when I exercise heavily (I haven't exercised with WB). Sometimes people consume grains/wheat accidentally in other products. Stick with it and hopefully your scale will begin moving soon! I think some wine is okay to drink -- I haven't, but I know others that do successfully. Hope you enjoy your party this weekend! :-)
ReplyDeleteYUM!! I only made a half batch, but will definitely make again! I forgot the parmesan until after it was out of the oven, so just sprinkled it on top. I dry fried a bag of the skinny dip fettucine noodles and loved the entire thing! Now the hard decision - which of your other recipes do I try next????

ReplyDeleteThey are 0 carb, 0 calorie, 100% gluten free noodles by a company called skinny dip. Another company that makes them is called miracle noodle, but those have to be refrigerated, while the skinny dip brand don't. They are made from the root of the konjac plant. The texture takes a little getting used to, but for 0 calories, 0 carbs, and gluten free, I will take it! They also don't have any soy in them. This company also sells a couple other shapes, along with rice pearls. Their website is www.skinnydipnoodles.com.

My husband is diabetic, and we just found out our son & I have wheat/grain sensitivities, so I am really just learning how to cook/eat grain & sugar-free. Your blog is so helpful. The pics are great, and your tips really help. I've already tried a few of your recipes, and my family loved them. Thank you so much for sharing your creations and knowledge.
ReplyDeleteThanks, Leah! I hope you enjoy it and find some other recipes to try. When I eliminated wheat/grains/added sugar almost a year ago, I was amazed at the difference it made. I lost 63 lbs...my triglycerides went from 546 to 115 which is unbelievable...and I was determined to still be able to enjoy my love of cooking...AND eating...so I made it my mission to do so. I hope you enjoy the recipes you try and good luck on your wheat free journey! :-)
