This evening I made home made chicken "noodle" soup...but not the regular kind. This version was a wee bit different...or twisted some might say. I got a head start on my soup by simmering a chicken for a few hours last night and then put it away for tonight's dinner. This soup was slightly different and also a bit of an experiment. I strained the broth and took the chicken off the bones after I got home this evening. I added a couple of diced carrots to the broth and simmered them until tender and returned the chicken meat to the broth and seasoned with sea salt, black pepper and some paprika for color. I made some zucchini "noodles" with my Spirelli and put them in the soup to cook a bit. Now, here is the "twisted" part where I wandered off the reservation a bit. I had a big container of baby kale, spinach and chard that I picked up this past weekend to use for salads; but instead, I decided it might taste good in the soup. I actually ended up adding the entire container (16-oz) to the soup and let it wilt in the hot soup. Weird? Maybe. Good? Definitely! It was even better than I thought it would be. It wasn't anything fancy, but tonight felt like a good night for a bowl of "comfort"...and this soup hit the spot. I have plenty left for lunch tomorrow too. I snapped a pic of my soup for you to check out below. I also snapped a pic of my "open face PB&J sandwich" that I had for lunch today. I toasted a little slice of the coconut flour bread I bought a couple weeks ago and spread it with peanut butter and decided that I'd make my own "all fruit spread". I used to buy the kind made by Polaner...but since I don't want all that sugar but still wanted a little fruit spread on my peanut butter...what could be better than "actual real fruit"? I mashed a few ripe strawberries with a fork in a little bowl and sprinkled in some Truvia until it was the sweetness I was looking for and spread it on my sandwich and couldn't believe how good and fresh tasting it was. Check out the pics below (I know some of you are probably gagging at all the added "greenery" in my soup...but you might just be surprised at how good it actually was). Enjoy!

What are you SAYING?? Kale and chard TOTALLY belong in soup!! Plays off the sweetness of the carrots. You go Grrl!
