Today we got up early and ran a bunch of errands. We went to a number of different places and somehow ran out of time to spend much time putting dinner together. I had all kinds of ideas for dinner, but it was almost 7:30 when we were headed home so we stopped and picked up a rotisserie chicken (which is the best "last minute" meal helper there is). When we got home I made us a big fresh salad with romaine, tomatoes, cucumbers and carrots while I brought a pot of water to boil so I could make hubby some quick spinach-kale-cheese ravioli to go with his rotisserie chicken and salad (he didn't have much of a lunch). I tossed his ravioli in some alfredo sauce and served that alongside his meal. It was a quick, simple and delicious meal after running around all day in the humidity.
