This afternoon I decided to have a nice big salad for lunch using some of the leftover rotisserie chicken and salad from last night's dinner. I filled a big bowl with romaine lettuce, halved Cherub cherry tomatoes, shredded carrots, diced rotisserie chicken breast and a little finely shredded cheddar cheese. To keep the "dressing" Mexican themed I mixed together a couple of tablespoons of "Jack's Special" Garden Gourmet fresh salsa and a heaping tablespoon of reduced fat sour cream (it looked similar to Thousand Island dressing). The only thing that might have made my salad a little better is if I had some fresh avocado to dice and toss in too. Jack's Special salsa is really some of the best fresh store bought salsa I have found. I picked it up a couple of weeks ago at Costco. It tastes like you just made it fresh yourself!
