"Mountain Morning" Tri-Color Omelets
This morning we awoke to a beautiful sunny 67 degree "mountain morning"...the birds are singing, you can hear the river running out back...I think this is what "peaceful" sounds like! I made us tri-color pepper omelets for breakfast as well as some turkey sausage links for my daughter. Our omelets were loaded with yellow, orange and red bell peppers along with Vidalia onions that I sauteed in a little olive oil. I sprinkled some shredded cheddar and Italian cheese in them before folding over. Take a look at our "mountain breakfast" below. Enjoy!
