I waited until after 2:00 today to finalize what to make for dinner tonight so I could see what the weather might be at dinner time. Even though they were calling for storms (and we had some doozy storms last night), it didn't look like rain yet so I decided to take a chance and grill for dinner. I wanted to do something different, so I decided to "go Greek" for dinner this evening. I found a recipe for Greek Style Turkey Feta-Spinach Burgers and a recipe for Tzatziki sauce made with Greek yogurt to top them with. For our side dish, I made oven roasted "Greek Style" french fries sprinkled with sea salt, black pepper and Greek seasoning. I served the burgers in pita pockets that we filled with tzatziki sauce and chopped tomatoes. It was a delicious and different meal and we really enjoyed it. For dessert I decided to keep it simple. I picked up some lady fingers and served them topped with a scoop of lowfat frozen vanilla yogurt and fresh blueberries and raspberries with a dollop of fat free whipped cream. It was festive, fresh and light. I snapped some photos below for you to see. I will post recipes later this week. Happy 4th of July!
