Tuesday's Wacky Doodle Dinner
Well, the sun has finally arrived! After 2+ days of constant rain...Mr. Sunshine has finally made an appearance -- although it did become a bit steamy when the sun popped out after all that rain. This evening I decided to make (heat) the Aidells Chicken Teriyaki Pineapple Meatballs for dinner. I didn't really know what to serve with them so I had hubby pick up a container of sauteed broccoli w/ peanuts from our local Chinese restaurant (I absolutely love the sauce they stir-fry the broccoli with) as well as a container of brown rice. No your eyes did not deceive you -- you got it right -- we had balls, broccoli and brown rice for dinner...I think that qualifies as wacky, don't you? I heated the meatballs in a covered non-stick skillet with a little water for about 8 minutes. I know it sounds like a really weird dinner...and it kind of was...but it was really delicious! The flavor of the sauce in the broccoli along with the flavor in the meatballs just complemented each other well. Even hubby liked it. I could tell he didn't seem really excited when I told him what we were having for dinner....but he scarfed it up and even got seconds on broccoli! ;-) I took a pic of our wacky meal below for you to see.
