Thursday's Linguine w/ Vodka Sauce, Smoked Italian Chicken Sausage, Red Peppers & Zucchini
Wow...it is finally Thursday. This has been a long week and I'm glad it is almost over! Tonight I was in the mood for pasta. I cooked some whole wheat linguine (Alma's) and while that cooked I diced and browned an Aidells Smoked Italian Chicken Sausage w/ Mozzarella along with some diced red bell pepper and diced zucchini. I poured a jar of DelGrosso's Vodka Sauce over the sausage and veggies and simmered them together for about 20 minutes and then served the sauce over the linguine topped with shredded Parmesan cheese (Sargento). It was absolutely delicious. The DelGrosso vodka sauce has a nice little kick to it...I love it -- it is the only brand of vodka sauce I will buy! Check out the pic below. Enjoy!
