It's Sunday evening and I decided to make a big pot of pasta sauce loaded with fresh veggies and chicken so we don't have to cook tomorrow night in all this heat and humidity we've had this past weekend. It should make at least one more dinner for us and a few lunches too. I diced 3 medium zucchini, 3 medium yellow squash, 1 medium eggplant and sauteed it in a little olive oil until tender. I removed the veggies to a bowl and set them aside. I then diced a package of Perdue boneless chicken breasts and sauteed them in a little olive oil in the same pan until tender. When the chicken was done I added the cooked veggies back to the pot and then poured in a jar of Mario Batali Arrabbiata Sauce (it is extremely spicy), covered and simmered everything on low for about 30 minutes. I cooked the pasta while the sauce simmered. I topped it with some fresh sliced basil from our backyard and some shredded Parmesan cheese. It was delicious!
This weekend I didn't do much in the way of cooking because we had a sick puppy that had to go to the vet Saturday morning because of his severe allergy problems this season. He got a steroid shot and I have only two words to say about how he has acted since then...."wacko jacko"...literally! Now I know why Lance Armstrong is such a stellar athlete -- steroids give you all kinds of magical powers and stamina...I saw what one dose did to my little puppy! He was ready to leap tall buildings with a single bound...that little guy was on overdrive ALL night long! Needless to say, none of us have gotten much sleep so we have just sort of laid around and napped here and there when we could. My big outing was to Publix yesterday for about 30 minutes! :-) It felt good to cook a home cooked meal full of veggies again this evening. We do go through a whole lot of fresh produce in this house. I snapped a pic of our meal below....check it out. Enjoy!
