Roasted Chicken w/ Kale & Spinach Ravioli and Carrots
Today we just relaxed and took it easy for most of the day. Later in the afternoon we decided to make our Costco run and pick up a few items since we didn't need much. For dinner I decided to try one of the new flavors of ravioli we picked up from there last weekend...Pasta Prima's fresh Superfood Kale & Spinach Ravioli. It’s a blend of kale and spinach complemented by five gourmet cheeses: Parmesan, Romano, Asiago, Mozzarella, and Ricotta. I picked up a rotisserie chicken on our way home from shopping and then cleaned, sliced and cooked some fresh carrots while the ravioli cooked. The ravioli only require about 3-4 minutes to cook. Since I wanted to be able to taste the flavors of the ravioli, I wanted a light and mild sauce to accompany it. I opened up a jar of Classico's Roasted Red Pepper Alfredo sauce and poured about half of the small jar in a pan and thinned it with skim milk so it wouldn't be heavy and we'd still be able to taste the flavors of the spinach, kale and cheeses in the ravioli. I tossed the ravioli with the heated sauce and dinner was ready in less than 30 minutes after we got home. The ravioli was really delicious and I would definitely buy it again. We actually have another package of it in the fridge since Costco sells it in 2-packs. We also have plenty of leftover chicken, ravioli and carrots to have another meal with which is always a good thing! The colors on our plate were so beautiful and it tasted really good too.
