Well, today we reached 97 degrees...and the forecast throughout the weekend includes triple digit days...yuck! This evening I didn't want to heat the house up while making dinner whatsoever...so I made us big cool and refreshing salads loaded with romaine, carrots, Cherubs tomatoes, crispy red peppers and chunks of leftover chicken tenders from last night. We drizzled our salads with light ranch dressing that I added lots of freshly ground black pepper and some cayenne pepper to just to give it a little kick. It was quick, easy and delicious...and definitely COOL. I snapped a quick pic to share. Enjoy!
