Well, it is Sunday and I had originally planned to make White Chicken Chili for dinner, but it was 70 degrees here today....YES....70 DEGREES in Atlanta in FEBRUARY...so crazy!!! Daffodils have been blooming for well over a week already, closer to 2 weeks. The birds woke me up this morning singing like they do in early springtime. Anyway, with this gorgeous warm weather, I made a sudden change in my dinner plans. It has been a while since we grilled salmon, so I thought that might be a perfect dinner for this kind of weather. I went to Publix and bought some of their "Bourbon Marinated Salmon Fillets"...if you haven't tried them before, they are delicious. I have tried many times to duplicate their marinade and I just can't quite come up with that exact flavor. I've used expensive bourbon, along with a variety of different recipes and while I've made some decent marinades...I still like theirs best (so far). So, my search for a recipe for "the bourbon marinade" continues. Along with our grilled salmon, we had baked potatoes and steamed baby brussel sprouts (don't turn your noses up...they are good...albeit a bit smelly, but quite tasty). I don't know what I was thinking when I bought these baking potatoes...they were HUGE and we could only eat half of them. Sometimes a simple meal is what I like best. Another beautiful presentation!!!! Looks "oh so tempting". Did you ever think to ask Publix what marinade they use and what is in it. You could always tell them that you have allergies and need to know what is in the marinade. Worth a try, don't you think?
ReplyDeleteGood idea, I may have to try that. I know that I did ask once if I could buy their marinade and they told me they don't sell it. I will see if your suggestion works though! :-)
