So simple...and sooooo good! |
Well...Monday is almost over....yeah! Actually it was a gorgeous bright sunny day here...and although I ran a few errands after work, I still had plenty of time to make a delicious dinner afterwards. On one of my earlier blog posts, I posted a picture of a new flavor of Classico sauce..."Roasted Poblano Alfredo" that I had stumbled upon. Anyway, I've been mulling over some ideas about how I wanted to use it. There were a few recipe suggestions that were attached to the jar lid. I took one of them and embellished it....and I must tell you, it turned out wonderful!
The recipe consisted of only a few ingredients....a bag of cheese tortellini (I used frozen because I can keep it on hand), grilled sliced chicken breasts, cherry tomatoes (tiny little "Santa Sweets" grape tomatoes), 1 jar of Classico Roasted Poblano Alfredo sauce, 1/4 cup grated Parmesan cheese, fresh chopped Italian parsley....that's it! You can see how beautiful it turned out...and it was as delicious as it was pretty!

While hubby grilled the boneless chicken breasts, I sliced and briefly sauteed some sliced grape tomatoes in olive oil (please...if I ever say EVOO...shoot me...that Rachel Ray gets on my nerves after a while)....sorry, back to cooking. So, the chicken was grilling and the tomatoes were sauteing, I chopped my fresh Italian parsley while my cheese tortellini was boiling (which by the way only takes 2 minutes to boil). |

Well...this meal took me approximately 20-25 minutes from start to finish. And honestly, you'd be hard pressed to find a meal any better at any local restaurant, I promise! It is a feast for the eyes as well as the soul....Bon appetit!

Thank you for sharing your recipe, I added it to my meal plan for the coming month :) I tried this new sauce for the first time tonight and it is *perfect*, reminds me of the spicy creme sauce they make at Cafe Brazil here in Dallas. I served it on top of southwestern crepes and it was hard to eat just one! For the filling I used leftovers of my favorite crockpot recipe--2lbs chicken, 1 can black beans drained, 1 can corn drained, 24oz jar of salsa. Cook on low until tender then shred with fork. Serve over rice, or mix with rice/cheese/refried beans to make burritos, or mix with a jar of alfredo and 1/2lb of pasta (we like radiatore)--so many variations and so few dishes to wash! :)

ReplyDeleteI had to come back and share my latest favorite way to eat this sauce! I mixed the dregs of the jar with ketchup to make a spicy dip for sweet potatoe fries--delicious! :) I used to like Costco's sweet potatoe fries but now I just might crave them!
ReplyDeleteThat sounds delicious Rachel! I like sweet potato fries too -- I would never have thought to do that with the tail end of the sauce and ketchup...I will have to try that.
